relationship between wort concentration and alcohol strength? Are they the same
meaning? People think that the degree of beer is the alcohol strength. But it's not. The degree of beer we often
talk about is beer's original wort
concentration, not alcohol strength.
The meaning of wort concentration:
1.low degree beer
The wort concentration is 6° - 8°, with the lowest alcohol strength as 2%, generally. So it’s the most suitable cool drink in summer. And the disadvantage is poor stability, short time to store.
2.Middle degree beer
The wort concentration is 10° -12°, with the alcohol strength about 3.5%, at a common degree of 12. They are the main varieties of beer produced in China.
3.High degree beer
The wort concentration is 14° - 20°, with the alcohol strength about 5%. It is internationally recognized that beer above 12 degree is premium beer. this kind of beer’s brewing cycle is long, it’s stability, so that holding the advantages of high storage and long-distance transportation.
The meaning of alcohol strength:
1.The degree of beer
Degree of beer and degree of liquor have different implications. Liquor degree refers to its alcohol content, and the beer degree means the original wort concentration. Alcohol in beer is transform from maltose, if the beer is marked "12" , indicates that the beer is brewed with wort which its sugar content is 12 °.
2.The alcohol strength of beer
Beer alcohol
strength is calculated by mass-volume percentage (M/V%). For example, the
trademark marked on the 12 degree refers to the original wort concentration,
therefore the alcohol strength is about 4 °. Normally, most of the alcohol
strength in beer is between 2%-5%. Common light beer contents 3.3%-3.8% alcohol
and dark beer contents 4%-5% alcohol. German alcohol strength is relatively
high, it is about 5%-9%, and it is a bit more bitter . The higher beer alcohol
strength contents, the better quality the beer is .
From the above, Wort concentration is proportional to the concentration of alcohol. For example, the original wort is less than 10 ° p, Alcohol should generally not exceed 5 degrees, which belongs to the low-alcohol beer.
